As we enter the transition from summer to fall, we begin to experience cooler and shorter days, the autumn foliage season begins, and schedules become more hectic as the holiday season approaches. During this time of colder weather and busier schedules, it is vital that we take proper precautions towards cold and flu season which is most common during this time of the year. Ideas for Packing Healthy Snacks and Lunches for Your Children

As most of our children have started school, it is important that we continue to provide nutritious meals and snacks for our kids throughout the year. Even though school lunches are available, they are not always the healthiest choice. Send a variety of foods from each food group: protein, low-fat dairy, whole grains, veggies, fruits, nuts and seeds to make sure your child is getting the nutrition they need.

The goal at HCCUA is to improve services, keep our members up to date with products we offer, plus have a better understanding of the quality of benefits available as a member.

One benefit we have worked to improve is Telemedicine Services, also known as InteractiveMD.  If you catch a cold or the flu, pink eye, sinus conditions, heartburn or a number of common conditions, Telemedicine is ideal for when your Primary Care Physician is not available. This includes after normal business hours, nights and weekends, when traveling, requesting basic prescriptions or any condition that does not require an “in person visit”.

Cashew Chicken with Cauliflower Rice

INGREDIENTS

1 head cauliflower, cut into florets

1 tbsp. extra-virgin olive oil

kosher salt

1/4 c. sweet chili sauce

3 tbsp. low-sodium soy sauce

1 tbsp. sriracha

1 clove garlic, minced

Juice of 1 lime

1 tbsp. sesame oil

2 red bell peppers, sliced

1 large zucchini, sliced into half moons

1 lb. boneless skinless chicken breasts, cut into cubes

1/2 c. raw cashews

Scallions, for garnish
